Offering a caller an option of leaving a voicemail or press a button to get an Assistant,Routing Calls to an Assistant via voicemail.

Is there a way that an Advisor can say in his voicemail - "To speak to my Assistant, please press (and then either type the extension or press a number that automatically goes to said Assistant)? Giving the caller an option to leave a voicemail or switch over to the Assistant.

Is there a way an Advisor can say in his voicemail, "To reach my assistant, please press (and then say a number or an extension)? but not having his phone automatically forward to said assistant? Giving callers the option to leave a voicemail or talk to assistant instead.

Yes, you can mention the extension number of the assistant in the voicemail greeting, and when the caller dials it, it will route to the extension.
