Is it possible to add options in the caller ID for outbound calls? For example, I could add an option such as 'My phone' and change the call ID to this so it displays on the recipients phone when I call, and then if I want to block my number select 'Blocked'.

Hello Luke,
You have the option to change you caller ID to multiple numbers on your account. You can choose your main company number, the number on your phone, and any other company numbers you have on your account.
You can also select the "Blocked" option which would cause your Caller ID to show as Unknown or Blocked when calling outbound.
This option can be found by logging into your RingCentral account, selecting the Settings tab, and then selecting Outbound Caller ID on the bottom left of the screen.
If you are an admin you can log in and make these changes to any one's account by selecting the Users tab, select the User you want to make changes to, and then Outbound caller ID on the bottom left. Hope this helps.

Hello. I have tried changing my settings. They all say display direct line and I verify the number is correct. But, when I call out, it continues to display the Main Number. Very Frustrating.

I checked your extension and your desk phone is set up to have the Main Number as the Outbound Caller ID.
To change this:
Go to Settings
Outbound Calls/Faxes
Expand Caller ID

Thank you. That is really odd, even yesterday it showed it was supposed to display my direct line because I went and set that up almost immediately. (I had ring central at a previous employer) Now when I checked it was reverted to the main number again. I hope my changes save and work now. I guess we shall see. :-)

I've located the settings where you can amend the caller ID.
Is it possible to amend these so when you call out it would say the name of your company? Like you can with the 'unknown' or 'blocked'

No...that is not possible based on your second statement. You can have your main DDL (Direct Dial Line) show your company name by completing the Company Caller ID setup under Company Numbers and Info. Then whenever you call out from your main number it will show the name of your company. Toll-Free numbers will always show as "Toll Free Call".
There have been new feature requests here in these forums for what you are requesting. I don't know if that is on the drawing board for the RingCentral development team at this time.

Nate is referring to the company numbers that are currently not assigned to any extension. So, users can use any Company Number (located in the screen shot below) as their Outbound Caller ID. But if a number is assigned to any extension, this includes IVRs, call queues, etc., it will not be available for outbound caller ID. Does that help clarify?

The 800 number would have to be listed under Company Numbers (as shown above) or be listed on that extension as a secondary number. I completely understand and agree with your logic. Currently there is a feature request out there for what you want. I would suggest voting for it as I have :)
