If I have one line but many extensions how many active calls can I have at a time?

It also depends mostly on your bandwidth and the quality of your router (especially the router setup as Danno just referred to).
Here's a RingCentral support site which allows you to enter the number of calls you might expect to have and then run a test, using those parameters, to see whether your system can handle that volume of simultaneous calls. The test, under Test Your Connection's Quality, allows for a maximum of 50 simultaneous calls but based on the results of the test you could surely interpolate as to whether you could accept more than that, if necessary.

So there is no plan based limits? The only limit is based on my network and internet access?

That's correct. There are plan minutes for toll-free calls but not for the number of simultaneous calls.

I forgot to mention that the only other plan based limits are regarding the number of people allowed in video meetings in the RingCentral Office plans. Video meetings only allow:
Standard Edition - 4 people per meeting
Premium Edition - 25 people per meeting
Enterprise Edition - 50 people per meeting
Audio Conferences allow for 1,000 people per conference.

if the 25 video seats are taken , can more ppl be able to join with only audio but able to watch the presenters video?
