For example, during business hours, one of our extensions would be set as the operator extension, and after hours, it would be another extension, based on a schedule? (So we don't have to change it manually every day).

This option is not available. However, you can make a custom rule based on your preferred time and assign extensions who would answer the calls. You may check on the link below,
