I am one of a bunch of support reps in a roll-over phone queue, and I want to start taking certain hours off every day. Can I till RingCentral to do that automatically?

You can, but it's a work-around approach because its not supported directly.  How you can do it is to:
- setup a custom rule in the roll-over phone user extension
- set it for the duration of the time you want off
- set the rule to perform a roll-over with all the numbers except for yours

If you have several users wanting/needing time off, then you would have to set up several custom rules for each time period that the queue is not using all the forwarding numbers.
