I am currently a Super Admin, and am taking over the role of a former employee who is also a Super Admin. How can we merge the two accounts, but keep my direct dial with their extension. I am physically moving offices as well.

The position I am vacating does NOT need to be a Super Admin.

You may swap your current number to the extension's phone number that you will take over. Then you can remove the Super Admin access of the old extension. Submit a ticket at https://support.ringcentral.com/new-case.html to ask for assistance with swapping numbers.
