After hosting a video meeting, is there a way to download participant lists (i.e. in Excel or as csv)?

Yes, the list of participants is included when you download the Meeting Report. Login to https://analytics.ringcentral.com/, then go to Performance Report. Select the Meetings tab, and you will see the download button on the top right corner.
