Are there api's that would allow me to trigger events such as call accept/end, mute/unmute and hold/unhold via HID commands initiated by a headset connected through USB?

I don't think so. SDKs don't provide such API. The SDKs are for the platform Rest API only (RingCentral server side). They have no idea of hardware connected through USB on client side.
