My office phones for the Poly E350 and E450 don’t allow me to conference in more than 2 outside lines as when I answer the 3rd line it won’t give me the option to conference it in.

Could you please describe the exact steps you take when you try to conference in a third line?
Sometimes the Conference softkey can be on a second screen of options, which you can access by pressing a More softkey on your display .
